Our New Venture in Six Rivers Community Market
Wow - what a great thing Six Rivers is! It give us all a new and really
efficient way to buy LOCAL!!! It's a great way to get to know your local
farmers and a wonderful outlet for those of us who will never be on the shelves
in Yokes and Safeway. It fills a niche and nicely complements our awesome
health food stores like Winter Ridge, as well as the Sandpoint Farmer's Market.

Spring Is Really Rockin'!
Things are moving along quickly here at the farm now that the grass is growing.
After about a month of complaining, we finally let the cows and all 10 new
calves out onto the green stuff! The grass got such a slow start, we were
all wondering when that would happen. The cows could see it, they just couldn't
get to it! It is very important to keep the grass growing and move the
cattle in rotational pastures so the grass doesn't get stunted in it's growth.
The more we move them, the more the grass grows and the better the nutrition in
it (all those moves creates better fertilizer distribution - another bonus!).
In the pig zone, we've had two new batches of piglets. In late April we
bought two new bred gilts (first litter sows) . They farrowed shortly
after arriving and we now have 15 little squigglers running about. Ima &
Jeanne are the proud mommies an are doing a great job raising their broods.
Esmi and Sandy will farrow in July. We also bought a new Hampshire cross
boar named Jacques. We named him this because he has quite a prominent
nose on him - like Jacques Cousteau!
*** Grass-Fed Beef Sales are Hoppin'!! ***
On the Pasture/Grass Finished Beef front, here we are again - it's not yet June
and we have less than one beef available for reservation! As people
discover the great taste and health benefits of Grass-Fed and Grass-Finished
Beef, we sell out earlier and earlier. We are raising 3 or 4 more steers
this year as well! If you're thinking you'd like some in your freezer this
fall, give us a call quickly.
We butcher our Grass-Fed Custom Beef only in the late Summer and early Fall
because that is when Grass-Finished Beef are at their very best in terms of
flavor and health benefit. Lush green grass helps tenderize and flavor the
beef.
*** Order Pastured Broilers and Turkeys Today! ***
Broilers will be ready in August, Turkeys in mid-November. We are
close to sold out on our Broilers as of Mid-May - Hurry and reserve your today!
Deposits are required to hold your birds - Deposits are suggested as quantities
are limited. Pastured Chickens are $2.52/lb live weight ($3.50/lb
dressed).
~~~ Pork Italian Sausage is Now Available! ~~~
You can now enjoy our DELICIOUS all Pork Italian Sausage! You can
choose from meaty 1/4 "Dogs" or 1 lb bulk sausage chubs. Excellent on
the grill for a casual dinner or sliced in a pasta salad or many other
dishes, the "dogs" are a perfect solution. The 1lb bulk sausage
is great to use in Lasagna, Spaghetti, Casseroles, Pasta Salads, and so much
more. Give it a try!

*** Bacon And Hams By The Cut Coming Soon ***
An Update here... The USDA has created yet another hurdle in the label
requirements for what they call "uncured" meats (any cured meats without
nitrites or nitrates). This new label is about the size of an 8 1/2 X 11
sheet of paper and creates huge liability for the processors. So, at this
point we are at a standstill for retail sales of Bacon and Ham.
*** You can get our delicious Hams and Bacon through Custom Hog Orders and
we've designed a new "Smaller Portions" Division of Custom Butcher Hogs.
